Spinach Pesto
This quick and healthy meal is ready in 15 minutes and full of fibre, folate, Vitamins A and K, iron, and potassium. But warning - I like mine garlicky :)
Spinach Pesto Sauce:
2 cups firmly packed spinach
3/4 cup grated parmesan cheese
1/2 cup Olive oil
1/4 cup pine nuts
1/4 cup lemon juice
4 garlic cloves
salt and pepper
Blend together. Spread over farfalle pasta or pasta of choice.
